Preparation suggestion

    Put a little olive oil in a pan and add the Mexican mixture.

    Leave it on the fire for 5 minutes, then add water and let it boil, on low heat, for 10 minutes.

    After the vegetables are well cooked, add the tomato juice and some finely chopped cherry tomatoes.

    Cover with a lid and let everything boil for another 5 minutes.

    Break the eggs over the preparation and cover with a lid to let them cook slowly without interfering.

    After 3-4 minutes, sprinkle freshly chopped parsley and feta cheese.

    If you are a hot taste lover, you can add chopped hot peppers or chili flakes to the preparation, and the aroma will combine wonderfully with the initial taste of the preparation.
