- 1First, we start by preparing the sauce we need for the steak.
- 2Mix the soy sauce with paprika, garlic and chilli flakes.
- 3Season the meat with salt and pepper, place it in a hot pan with a teaspoon of olive oil and a cube of butter.
- 4add 2 sprigs of rosemary for an even richer flavor, turning it on all sides until well browned.
- 5Very important: the meat should not be kept for more than 5 minutes on each side.
- 6After our meat has browned, we move it to a tray to be put in the oven together with the rosemary sprigs.
- 7Brush the meat with soy sauce and put the tray in the oven for 25-30 minutes.
- 8During this time, we start to prepare the mustard sauce and the peas.
- 9In the pan in which we browned the pork tenderloin, add the butter.
- 10When the butter is completely melted, add mustard seeds.
- 11Add the liquid cream and a teaspoon of classic mustard, mixing until the sauce thickens.
- 12Finally, when the sauce has thickened, it can be taken off the heat.
- 13Boil the peas for 5 minutes in water with delicate, salt and pepper, and then put them aside.
- 14When everything is ready, cut the pork tenderloin, put the mustard sauce on top and serve with the pea side dish.
