    To make the tart dough, we place the flour, butter, and salt in a bowl and knead with our fingers until we get a crumbly, sand-like texture.

    We add the egg yolk and water, then work the dough until it forms a ball. It is then chilled for 15-20 minutes.

    After taking the dough out of the fridge, we roll it out into a circular shape, slightly larger than the tart pan, so that it covers the bottom and sides of the pan.

    The dough is baked for 10-12 minutes at 180°C in the preheated oven (it should not be fully baked).

    Let's move on to the filling! In a bowl, add the heavy cream, eggs, salt, and pepper, and whisk well.
